Ingredients - Thai Chickpea Salad

  • 1 tin chickpeas, drained
  • 1 red cabbage, finely shredded
  • 2 carrots, peeled and coursely grated
  • 1 red bell pepper, deseeded and diced
  • 1 spring onion, sliced
  • 25g coriander, finely chopped

Dressing

  • 2 tbsp PB2
  • Orange, juiced
  • 2 tbsp light soy sauce
  • 1 tsp rice vinegar
  • 1 tsp ground ginger
  • 1 clove garlic,minced

Method

1️⃣ Combine chickpeas, carrots, cabbage, pepper, spring onion and coriander in a bowl

2️⃣ In a separate bowl, whisk together all dressing ingredients 

3️⃣ Add dressing to salad and toss
