Ingredients - Zesty Lime & Coriander Fish Tacos
- 4 halibut or cod fillets, cubed
- 2tsp lime zest
- 25g fresh coriander, finely chopped
- Spray oil
- Sea Salt and pepper
- 2 tbsp. lime juice
- 4 wraps (ISS approved)
- Wooden skewers- soaked in water or metal ones
(This dish works just as well with grilled chicken or cubed firm tofu).
Dressing
- 25g fresh chopped coriander
- 1 clove fresh garlic
- 3 tablespoons fresh lime juice
- 1 teaspoon chipotle powder
- ½ teaspoon ground cumin
- ¼ teaspoon salt & pepper
- 1 table spoon low-fat Greek yoghurt
Method
1️⃣ Add lime zest, coriander, spray oil, lime juice, salt and pepper into a bowl. Add the fish and toss until well combined.
2️⃣ Thread the fish onto metal skewers (or soaked wooden ones)
3️⃣ Heat on grill over high heat and cook the skewers for 5 minutes on each side or until cooked through
4️⃣ Mix the ingredients of the dressing and serve on wrap with some jalepenos or chopped spring onions
