Ingredients - High Protein Baked Eggs

🥚 5 eggs

🍅 2 cups cherry tomatoes

🌶️ 1 red pepper, chopped

🧅 ½ red onion, chopped

🧄 3 garlic cloves, minced

🧀 ½ pack feta

🫒 2 tbsp olive oil

🌿 1 tsp dried oregano

🧂 1 tsp sea salt

🌱 ½ tsp dried thyme

⚫ ½ tsp ground black pepper

🌶️ ½ tsp red pepper flakes

🥬 1 cup baby spinach

🌿 Chopped chives for garnish

Method

1️⃣ Preheat your oven to 375°F (190°C).

2️⃣ Drizzle olive oil in an oven tray and add spinach, cherry tomatoes, red pepper, onion, & minced garlic. Sprinkle with dried oregano, sea salt, thyme, black pepper, and red pepper flakes.

3️⃣ Crumble feta on top & mix.

4️⃣ Bake in for 20-25 minutes, until the vegetables are tender and the feta is starting to melt.

5️⃣ Remove from the oven and crack 5 eggs into the baked feta and vegetables (make little holes) then season.

6️⃣ Return to the oven & bake for approx  10-12 minutes, or until the eggs are cooked to your desire.
