Sticky Beef Egg Fried Rice

Want to make a meal in under 15 minutes that’s perfect for on the go or with leftovers? This sticky beef egg fried rice is the perfect dish for the whole family!

Packed with flavour, over 40g of protein per serving and simple to put together it ticks all the boxes. 

Protein and a little fat comes from the lean beef and the egg, carbohydrates and all important fibre from the rice, vegetables and honey

Ingredients

  • 🥩 150g lean beef mince

  • 🧂 Salt & pepper

  • 🍚 140g cooked basmati rice

  • 🍳 1 egg

  • 🌶️ 1/2 medium pepper, diced

  • 🧅 1/2 small onion, diced

  • 🍯 2 tsp honey

  • 🥢 3 tsp soy sauce

  • 🌑 1 tsp dark soy

  • 🌶️ 1-2 tbsp sweet chilli sauce

Method

Serves 1

  1. Season beef mince with salt, pepper, 1 tsp soy sauce, and 1 tsp honey. Air fry at 200°C for 5 mins, separating the mince with a spatula.

  2. Mix 1 tsp honey, 2 tsp soy sauce, dark soy, and sweet chilli sauce. Set aside.

  3. Add red pepper, onion, and rice. Pour the sauce on top and mix. Then air fry at 200°C for 3 mins.

  4. Add a whisked egg, mix, then cook for another 3-4 mins until the egg is cooked through.

  5. For an extra kick, add diced spring onions and red chilli.

  6. Enjoy!
